Within Categories you have the following options:
Add a Category- Here you can give a new gallery a name, a description, assign it to a particular ‘sort order’ in relation to other categories.
Edit a Category - Which includes the name, the sort order in relation to other categories, and you can edit the gallery description.
Remove a Category- Here you can delete a category
